The Paris Bistro 8" Chef's Knife

The chef's knife was originally designed to slice and disjoint large cuts of beef, but today it is the primary general-utility knife for most western cooks. The Upsetting Technique

Instead of softening the whole piece of steel, Peugeot uses a technique called ‘upsetting’. Only the part that will turn into the ricasso will be heated (forged) to preserve the authenticity (hardness, resistance to corrosion) of the steel that will be used for the blade. Once heated and softened, a ball is formed by upsetting, then hit to create the ricasso. The blade is finally cut to its final shape. This unique technique is what makes Peugeot products stand out.

  • Cutting Surface: Use your knives preferably a wooden chopping board. Not recommended: tile, ceramic, synthetic, stone or glass cutting boards.
  • Care: We recommend that you wash your Peugeot knives immediately after use, with a nonabrasive sponge or a soft cloth soaked in soapy water. After rinsing, wipe immediately with a dry tea towel.
  • Honing/Sharpening: Weekly honing recommended to extend the time between sharpening. In order to ensure that the cutting edge of your knife remains effective and the knife remains comfortable to use, we recommend regular sharpening, rather than waiting for the blade edge to become blunt. About every two months for normal domestic use.
  • Storage: Avoid bringing the cutting edge in contact with other utensils. Best practice is to use a wooden knife block or in-drawer knife tray, or knife case.
